This wine grows on the south-east slope of the Steinsberg, where the sun dries the grapes in the early morning hours, allowing them to ripen longer. Especially in the hot summer of 2018, when the strong sunlight laid the foundation for the intensive color pigmentation immediately after flowering.
Early defoliation, yield regulation by removing the shoulders and grape parts paired with a sunny and dry autumn have produced an intense concentration of aromas and drove the Oechle values ??up to 110°. Ideal conditions for a selection, which of course we have harvested and selected by hand.
Fermentation took place, after some juice has been drawn off, for 8 days on the mash, with the pmoace hat submerged 3 to 4 times during the main fermentation phase, followed by 10 days of maceration before pressing. Then 18 months of aging in a new barrique barrel and unfiltered bottle filling.
The wine shows a deep dark red, almost black color. On the palate, intense dark forest berries aromas paired with cinnamon and vanilla notes and a hint of cherry. It gets its name from its appearance and from the many crows (badish Krabb) that guard the location Kelterwingert over the winter.
A wine that goes well with dark meat or game dishes and strong herbs. But it is also a perfect companion to spicy cheese platters.
