This wine grows on the south-east slope of the Steinsberg, where the sun dries the grapes in the early morning hours and lets them ripen longer therefore.
Most careful vineyard work, a consistent reduction in yield, multiple selection of grapes and hand-picking are the basis for our Pinot Noir "S".
The carefully harvested grapes are fermented classically on the mash - while the pomace was submerged during the main fermentation phase 3 to 4 times a day. After a maceration period of another 10 days, the maturation was started in the barrique barrel, where it matured for another 20 months and thus could integrate to a solid tannin structure. Then the wine matured for another 6 months in the bottle.
A wine that combines well with dark meats or game dishes and strong herbs. But is also a perfect companion to spicy cheese platters.
